'First Day of School' Teacher Treat

Well, school started up again this week.  I don't think any of us were ready for summer to be over.  My kids were are little nervous, but mostly excited to get back to school.


I wanted to have some type of treat for the teachers for the first day of school.  Last year I gave them a coffee treat.


This year I made Apple Scones and boxed them up with a little butter and homemade apple butter.  I know how hectic the morning of the first day of school is.  I'm pretty sure I never had time to get breakfast.  And it's really ok to bribe teachers.  I believe "happy teachers = happy students".   This recipe is so quick and easy, I baked these the morning of school so that they would be warm and fresh.


Apple Scones


2 cups flour
1/4 cup sugar
1 tsp. cinnamon
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/4 cup cold butter

1 large or 2 small apples peeled, cored and grated
1/2 cup buttermilk or sour milk (milk with 1 tbsp. white vinegar)

Heavy cream for brushing tops
Sugar and cinnamon for sprinkling

Combine first 6 ingredients in a bowl.  Using a pastry blender, cut in the butter.  In another bowl combine the grated apple and milk.  Add the apple mixture to the dry ingredients.  Mix until just combined (do not over mix or knead the dough, this will make it tough).   Divide the dough into two parts.  On a parchment lined baking sheet.  Form the dough into two 6" circles.  Brush the tops with the heavy cream and then sprinkle on sugar and cinnamon.  Using a knife score the tops of the circles into 6 pieces (see below - this will make it easier to cut them into individual pieces after they have baked).

Bake in 400 F oven for about 15 mins.  They will be golden brown.  Serve warm.


Don't you love the 100% recycled paper take out boxes I found at a restaurant supply store?  These are going to come in handy for parties and Christmas goodies.
