This is an easy fix for those yucky bananas that you didn't eat in time. If you don't have a great banana muffin recipe, try this one. It's a favorite at our house.
Banana Chocolate Chip Muffins
1 3/4 cups flour
1/2 cup sugar
1 tbsp. baking powder
1/2 tsp. salt
1/2 cup chocolate chips
1 egg
1/4 cup oil
1/4 cup sour cream
1 cup mashed banana
Mix the dry ingredients together. Mash the ripe bananas add the egg, oil, and sour cream. Make a well in the dry ingredients and pour the wet ingredients in. Mix until just moistened. Fill 12 paper lined muffin cups. Bake at 400F for 20 to 25 mins.
